Image processing is a commonly used term used in the fields of electrical engineering and computer science. Image processing refers to any form of "signal processing" for the the input is an image such as a digital picture or video. The output may be either an images or set of characteristics/parameters related to the image. On this page I've began collecting a few definitions and resources / webpages which I like.
